Healthier chicken recipes for the new year

If you are looking for some new chicken recipes for the new year to eat healthier and lose weight or if you're tired of fixing the same baked chicken recipes, take a look at these recipes from the Campbell's Soup Company "Campbells' Kitchen" Web site at www.campbellkitchen.com to add variety to your recipe collection.

Creamy Chicken Enchiladas

1 can (10 3/4 oz) Campbell's Condensed Cream of Chicken Soup or 98% fat free Cream of Chicken Soup


1 container (8oz) sour cream

1 cup Pace Picante Sauce

2 tsp. chili powder

2 cups chopped cooked chicken

1 cup shredded Monterey Jack Cheese

10 Mission Fajita size flour tortillas, warmed


1 medium tomato, chopped

1 green onion, sliced

Mix soup, sour cream, picante sauce and chili powder. Mix 1 cup picante sauce mixture, chicken and cheese. Spread about 1/4 cup chicken mixture down center of each tortilla. Roll up and place seam-side down in 3 quart shallow baking dish. Pour remaining picante sauce mixture over enchiladas. Cover.

Bake at 350 degrees for 40 minutes or until hot. Top with tomato and onion.

Tip: For 2 cups chopped cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound boneless chicken breasts or thighs, cubed, 5 minutes or until chicken is done. Drain and chop chicken.

Prep time: 20 minutes

Cook time: 40 minutes

Thyme Chicken & Roasted Winter Vegetables

3 lb. whole broiler-fryer chicken

1 Tbsp. butter, melted or margarine, melted

4 medium red potatoes, quartered (3 1/2 cups)

4 medium carrots, cut into 1 inch chunks (1 1/2 cups)

6 medium parsnips, peeled and cut into chunks (3 cups)

1 cup halved Brussels sprouts

4 medium onions, peeled and quartered

1 Tbsp. chopped fresh thyme leaves or 1 tsp. dried thyme leaves, crushed

1 cup Swanson Chicken Brother or Natural Goodness Chicken Broth

1/2 cup dry white wine

Spray 17 inch by 11 inch roasting pan with vegetable cooking spray. Remove backbone from chicken, using poultry shears. Place chicken flat with skin-side up in prepared pan. Brush with butter. Place vegetables around chicken. Sprinkle with thyme. Mix broth and wine and pour half of broth mixture over all. Roast at 375 degrees for 1 hour or until chicken in done.

Remove chicken and keep warm. Stir vegetables. Add remaining broth mixture to pan. Roast 30 minutes or until done.

Prep time: 15 minutes

Cook time: 1 hour 30 minutes

Swanson Rosemary Chicken and Roasted Vegetables

3 lb. whole broiler-fryer chicken

1 Tbsp. butter or margarine, melted

4 medium red potatoes, quartered

2 cups fresh or frozen baby whole carrots

2 stalks celery, cut into chunks

12 small white onions, peeled

1 1/2 tsp. chopped fresh rosemary or 1/2 tsp. dried rosemary leaves, crushed

1 cup Swanson Chicken Broth (regular, Natural Goodness or Certified Organic)

1/2 cup orange juice

Brush chicken with butter. Place chicken and vegetables in roasting pan. Sprinkle with rosemary. Mix broth and orange juice and pour half of broth mixture over all. Roast at 375 degrees for one hour. Stir vegetables. Add remaining broth mixture to pan. Roast 30 minutes or until done.

Tip: To quickly peel onions, pour boiling water over onions and let stand 5 minutes. Then slip off skins.

Prep time: 15 minutes

Bake time: 1 hour 30 minutes
